Rare Steakhouse’s fine dining inspiration came to owner and CEO Jack Sosnowski while he was building his local restaurant businesses in Madison under the banner Noble Chef Hospitality. Sosnowski wanted his new restaurant to re-create the nostalgic, romantic feel of the great American steakhouses that used to command attention in downtowns across the country. Combining those elements with local flare Rare Steakhouse Madison was born; those same qualities with Milwaukee flavors went into creating Rare Steakhouse here in the Brew City making this is more than just another local restaurant. It is fine dining in a classic and cozy setting harkening back to a simpler time where eating at a restaurant was meant to be experienced and special, not an everyday occurrence.
In addition to having a diverse, quick and affordable lunch menu and serving one of the best dinners in town, Rare Steakhouse is also a go-to Happy Hour spot thanks in part to its half-priced appetizers, half- priced wines by the glass and $8 specialty cocktails.

Introducing our People
- Owner -
Both Jack and Julie Sosnowski’s hospitality roots run deep. Julie’s family has run Monte’s Pub and Grill in Verona for over 30 years where she and her sisters learned the business. Jack’s grandmother was waitress in the Executive dining room at Ford Motor Company in Dearborn, MI where his father was born. Len Sosnowski, Jack’s dad, a longtime Madison attorney, was a cook in the officer’s club during Vietnam before returning to Wisconsin to practice law.
Jack graduated from Edgewood High School and studied business at Arizona State University and UW-Madison, but found his passion while working at Desert Mountain Country Club in Scottsdale, AZ. While running the busy City Bar on State Street during college, two things caught his eye: a beautiful girl named Julie Stoleson, and a vacant property on West Mifflin Street. Julie became his wife, and the property, a former deli, became the Ivory Room Piano Bar.
Jack and Julie worked every shift together for the first few years of the Ivory Room, saving until they had the resources to open the Capital Tap Haus in 2010. Two years later, they doubled the size of the Piano Bar, and opened Buck and Badger Northwoods Lodge on State Street.
Jack’s love of the old nostalgic romance of the Great American Steakhouses in Chicago, New York, Indianapolis, Washington, and Florida inspired the idea for Rare Steakhouse. Every detail of Rare’s interior, and indeed all of their restaurants, was designed by Julie’s natural talent for evoking feeling through design, and the menu and service are still executed under Jack’s personal direction.
Jack and Julie continue to grow their family as well as their business. Noble Chef Hospitality is proud to be Madison’s family owned restaurant group, with the new addition of Freiburg Gastropub on Monroe Street in 2015 and Rare Steakhouse in downtown Milwaukee in 2016.
- General Manager -
Jason Wedner is the General Manager of Rare Steakhouse – Milwaukee. Jason is a certified sommelier and has over fifteen years of experience in the restaurant and hospitality industry. He was previously with Onesto, a popular restaurant located in Milwaukee’s Third Ward. Jason also worked in management at Nines American Bistro at the River Club of Mequon, as well as at Mo’s Steakhouse. Jason knows Milwaukee diners, and he stops at at nothing to give Rare’s patrons a one-of-a-kind experience
- Catering & Banquet Manager -
Krisstina Stein is the Catering and Banquet Manager at both Rare Steakhouse locations in Milwaukee and Madison. Krisstina was previously with Bartolotta Group and served as Operations Manager at Discovery World in downtown Milwaukee. Eager to get back into the restaurant industry, the transition to Noble Chef Hospitality and Rare Steakhouse proved to be an easy decision. Krisstina loves working with clients to ensure that their events are flawless and satisfy all their requirements.
Chef Nick Donisi
- Executive Chef -
Chef Nick Doniski is the Executive Chef at Rare Steakhouse – Milwaukee. Before joining the team in Milwaukee, Chef Nick spent ten years with Rare’s parent company, Noble Chef Hospitality Group in Madison, serving as the Executive Chef at Capital Tap Haus. From there, Chef Nick continued his culinary journey in Chicago, gaining valuable experience leading the kitchens at Formento’s, Davanti Enoteca, Centro Restaurant and various “Lettuce Entertain You” eateries.
With a strong background in Italian food and a passion for incorporating local ingredients, Chef Nick prides himself on putting new twists on classic dishes. This leads to clean, high-end and simply elegant food emerging from his kitchen.
